Jacques Pepin's Tortilla Pizza

Every year when we get fresh tomatoes from the garden, one of our staple snacks is a flour tortilla pizza we saw in a Jacques Pepin video.  These are super simple to make and really, really yummy!  The trick is don't top the tortillas with too much, as they can't carry the weight of a lot of toppings.  




Ingredients:

  • 2 large flour tortillas
  • 1-2 large fresh tomatoes
  • 1/4 red onion fresh or pickled (recipe coming!)
  • shredded mozzarella cheese
  • shredded or grated parmesan cheese
  • fresh basil (or could be substituted with Italian herb seasoning)
After assembling as shown below, bake at 400 degree oven for 12-15 minutes until just beginning to brown.

Assembly:

Line a large sheet pan with foil, drizzle with olive oil, and place two large flour tortillas on the sheet, turning to coat both sides with the oil.



Chop fresh basil and slice fresh tomatoes and red onion very thin.



Place the tomatoes down first, then the onion and herbs.  I used pickled onions this time (recipe coming!) but we often use fresh.


Sprinkle with mozzarella and top with parmesan.


Bake at 400 degrees for 12-15 minutes until the cheese has melted and the cheese and tortillas are just beginning to brown.

Let sit for a moment to set, then cut with a pizza wheel, and enjoy!!
